Thanksgiving Approved: HCG Whipped Cauliflower
Creamy whipped cauliflower, a/k/a “faux-tatoes” or “mock mashed potatoes” is a perfect side dish for holiday meals. Even if you don’t “love” cauliflower, this dish has a velvety smooth texture and it is so much better for you when you’re staying away from starchy vegetables on Phase 3 of the HCG diet.
Ingredients
- 1 medium head of cauliflower, cut into florets
- 1/4 cup half and half
- 2 Tablespoons butter
- 1/4 cup sour cream
- 1/4 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- pinch of white pepper
Instructions
- Steam the cauliflower until just tender.
- Drain the cauliflower well, and pat with paper towels to soak up any excess moisture.
- Place cauliflower florets in the container of a food processor. Pulse a couple of times to slightly break up the florets.
- Add the half and half and butter and process in pulses until a puree starts to form. Add in the sour cream, garlic powder, onion powder, salt and pepper.
- Process until creamy and mostly-smooth. Add more half and half if necessary. Taste and add more salt in necessary. Serve immediately.
