Thanksgiving Approved: HCG Whipped Cauliflower

Creamy whipped cauliflower, a/k/a “faux-tatoes” or “mock mashed potatoes” is a perfect side dish for holiday meals. Even if you don’t “love” cauliflower, this dish has a velvety smooth texture and it is so much better for you when you’re staying away from starchy vegetables on Phase 3 of the HCG diet.


  • 1 medium head of cauliflower, cut into florets 
  • 1/4 cup half and half
  • 2 Tablespoons butter
  • 1/4 cup sour cream
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • pinch of white pepper


  1. Steam the cauliflower until just tender.
  2. Drain the cauliflower well, and pat with paper towels to soak up any excess moisture.
  3. Place cauliflower florets in the container of a food processor. Pulse a couple of times to slightly break up the florets.
  4. Add the half and half and butter and process in pulses until a puree starts to form. Add in the sour cream, garlic powder, onion powder, salt and pepper.
  5. Process until creamy and mostly-smooth. Add more half and half if necessary. Taste and add more salt in necessary. Serve immediately.
