HCG- Italian Style!

Calling all Italian food lovers!

Just because you are currently on the HCG program doesn’t mean you have to sacrifice some amazing Italian flavors! Here are three amazing recipies that incorporate Italian flavor and style, without the added calories, fat or sugar!

Recipe 1: Baked Italian Meatballs


• 100 grams lean ground beef
• 1 teaspoon basil
• 1/8 teaspoon oregano
• 1/8 teaspoon garlic powder
• 1/8 teaspoon oregano
• 1 tablespoon minced onion
• 1 clove garlic crushed and minced
• 1 serving Melba toast crumbs
• 1 recipe marinara sauce

Mix thoroughly meat, crumbs and spices.
Create balls.
Put into baking dish and cover with marinara sauce.
Bake for 20-25 minutes at 360 degrees. Serve over hot cabbage noodles.
May combine with basil.

Makes 1 serving


Recipe 2: HCG Friendly Lasagna

1 can hunts fire roasted diced tomatoes, drained
Half a can of tomato paste
Half a can of tomato sauce
1 medium onion
Fresh parsley
Diced garlic
Tsp. or more Thyme & oregano
Powdered stevia (just a very light sprinkle)
Broth (beef) just to sauté.
Lean beef or chicken or I used turkey
Pepper flakes
Zucchini will act as the noodles.

Cook together herbs, onion, parsley, salt/pepper, pepper flakes, tomatoes, tomato sauces and meat together. Simmer very low till meat is done. As it cooks, mash down the tomatoes a bit. Lightly add a sprinkle of powdered stevia.
Simmer this to reduce out excess liquid on low heat.

While this is cooking/simmering, start on the noodles. Cut zucchini or summer squash into long slices, I took off the skin too. Bake till slightly cooked, topped with salt, paprika and garlic.

Get a small baking pan, and add a little sauce to the bottom. Then layer zucchini, sauce, Zucchini and so on. Top with garlic Melba crumbles and bake for about 30 minutes.


Recipe 3: Italian Hazelnut Cappuccino Granita


2 cups cold brewed coffee

10 to 12 Stevia Hazelnut drops

4 to 6 drops Capella Cappuccino

8 to 10 Clear Stevia drops


1. Stir together all the ingredients and taste for additional sweetness or flavor. Pour into a shallow, freezer-proof container and freeze uncovered.

2. Every 15 to 20 minutes, use the tines of a fork to fluff the ice mixture and return to the freezer. When the mixture appears snow-cone like, it is ready to serve.
